DH and I desperately need to get away for a few days. We need ideas!
BUT: Major caveat!!! Both DH and I are makpid that he should daven with a minyan three times a day.
Our only other wish list item is somewhere within 3-4 hours driving distance of brooklyn.
I would love a hotel with a pool/beach I can relax by. I don't necessarily want a city vacation running around doing touristy things. But I am open to hearing all suggestions!!!

Hmmmmmm.... Boston or Philadelphia will have minyanim. Boston has beaches nearby. You can go to a hotel in Long Branch, NJ, which has beautiful beaches and minyanim and food nearby.

The hotels in the Catskills are basically all a mostly chassidish crowd. I wouldn't go there now for a couples vacation because it's packed with families and very noisy.
Would you travel to New Hampshire?

I am going to look into Boston and NJ.
Isn't NH a much farther drive? And where would DH find a minyan 3 times daily midweek there? We're not looking to stay at the kosher hotel there that costs a fortune.
Please keep ideas coming, you guys are the best!

In NH there's normally a midweek minyan in Lincoln, NH - details at http://www.lincolnnhminyan.com/
I think your best bet is Tannersville, NY. 4 shuls with reliable minyanim, beautiful nature, not too far from Brooklyn, plenty of lakes to enjoy, and not too crowded or overrun with frum tourists.
Other options to consider: depending on when you're going, you could go to Onset, MA, which is closer and has beaches everywhere, but their weekday minyan is only reliable after Tisha b'Av. Another option is Lake George, which I believe has weekday minyan all summer, and definitely has a large lake to enjoy. You could check the website of Touro Synagogue in Newport to see when their summer weekday minyan starts.

He has no issue reading, learning or napping in the hotel room while I relax by the beach or pool

the shul supposedly has minyanim all summer but they might be weird hours.
has some touristy stuff but also some nice scenery and beaches.
