Does anyone have info on xylitol in baking or just substituting for sugar in any recipe?
It seems to be the magic sugar, It's very expensive and I'm wondering whether it's worth anything. I see it's used in sugar free chocolates and gum.

In coffee or others unbaked products, it's fine. I did bake cookies with it once, and the cookies did not hold together so well. It could've been from other factors as well (I used whole wheat flour instead of white) or anything else I did wrong I would need to try it a few more times to get some experience with it. Why don't you try it out and see for yourself? (And then share your results with us !)
