I have 3 leeks mistakenly bought sitting in my fridge. Any ideas what I can do with them?

Leek patties for Siman
Wash well
Boil
Drain
Grind in food processor
Squeeze out some moisture
Salt and Pepper
Eggs
Matza Meal
Mix
Fry like Latkas or Bake

2 tablespoons olive oil
2 large leeks, white and light green parts only (about 12 ounces), halved lengthwise, sliced thinly and washed in 3 changes of water
3/4 teaspoon salt
4 large eggs, beaten
1/2 cup fresh breadcrumbs (for Passover, use matzo meal)
3/4 teaspoon allspice
3/4 teaspoon cinnamon
vegetable oil for shallow frying
This is incredible! And one of the simanim I make for Rosh Hashana. It freezes beautifully.

Leek knishes.
Sauteed onion and leek and other beH is if you want. Cut puff pastry dough into squares. Place a spoonful of sauteed vegis inside and close up. Brush with oil and spices. Bake til ready.
Perfect time of year to have leek by mistake!

Just roast them in whole slices. Slice it open (to clean dirt) and wash, drizzle with oil and salt and roast 425. Sooo good.
