I think rubia is black-eyed peas, right? Anyway, I want to make this for one of the simanim, but al the traditional recipes I've seen have it in a sugar sauce, which my family doesn't care for. I'm thinking it would be nice in a tomato-based sauce. Anyone have such a recipe? Or any other recipe for it that's not based on sugar?

Don't use black eyed peas. They are infested with bugs that look like the black eye in the bean. It is truly one of the most disgusting foods. I can't post the movies of someone cutting open those beans, even with a hechsher, and bugs crawling out.

Use the canned ones. Make a salad with beans, red onions and dill, then season with oil and salt.

Rinse and drain the canned ones (Goya & Eden have it) and season as you would chickpeas.

Consider cooking with sauteed onions and barbecue sauce.

Sautée dice onion
Then add a small can tomato sauce
Sautée that too with a lid becauce it wil splatter
About 5 min

Rinse a can of black eye peas
Add to the pot

Then add a can full of water
Salt and allspice

Simmer until the liquid reduces a bit

Some use very long string beans for Lubia

I cook them then mix them with carmelized leeks (another siman!) and chopped sun dried tomatoes (the kind packed in oil), and dress with some of the tomato oil, honey, and balsamic vinegar (leave out if you don't do vinegar). The resulting salad is delicious and it's always a huge hit.
