Go into any toy or hardware store and they have so many options.
I bought my boys the Jewish view puzzles and we will hang them in the succah.. they have a 1000 piece shiva's haminim. The others are 500 PC's and have Jewish themes.

Can he build a mini 3d sukka?
You would need wood boards that he can glue or hammer together. He can build mini table and chairs, or buy ready ones and glue them into the sukka. And decorate it. One of my boys did this years ago and I am still putting it in our sukkah.
Or how about taking old cds or cardboard cut into circles or squares. Cover them with material. Then have him look through old books or magazines for pictures he can use for ushpizin. Cut them out and glue them unto cardboard and cut out. Then glue the pics on the covered squares or circles. Use letter stencils to trace and cut out the names from shiny paper and glue on. You can either hang them separately or connect them.
That should keep him busy
Of course you can always buy a craft in a store.
