What's a nice way to plate two mini salmon wellingtons as an appetizer?
What's a good side dish to pair eggplant rollatini with? Do you think zuchinni or broccoli latkes would look nice with the rollatini on a plate? Any other ideas?

rolletinis with mashed potatoes if its filled with sauce/cheese. If its pareve filled with veg then rice in side

I like rollatini plated in the center of a ladle of sauce. Sprig of some green herb on top.
Sounds like the rollatini would also look nice placed gently over two overlapping latkes.
