What are some tried and true items you would recommend?
Which food/household items was essential to stock up to keep you through the 14 days?
What items do you think you could have skipped out on?
I’m sure it varies by family but I can use tips from people who have been there done that.

I wasn't but I'm thinking flour, pasta, rice, eggs, frozen meat, potatoes, cereal, shelf stable milk. I think grocery stores here will keep delivering so no need to panic if you run out.

If you live in an apartment and don’t have your own washer, Woolite or other hand laundry detergent.

I didn’t really “stock up” but I made sure I had these items:
Diapers
Baby wipes
Soap and shampoo
Extra laundry detergent
Tissues
Extra plastic cups
Eggs
Pasta
Rice
Canned chickpeas and canned beans
Cereal
Milk (I froze it)
Bread (I froze)
Matzah and crackers
Flour and yeast to bake more bread if needed
Potatoes
Onions
Some meat and chicken . The stores don’t have chicken. My DH just traveled to my FILs house to get chicken from my in laws freezer.(because they always have extra) My FIL works in shechita and was told late Friday he needed to go back to work last night so that they can do more shechita since the stores called them that they are all sold out , so they are working over time now.

I got diapers
Wipes
Toilet paper (one pack)
Paper towels ( In case of actual quarantine)
Shampoo conditioner soap etc
Pesach cleaning supplies
Potatoes
Sweet potatoes
Frozen vegetables
Chicken and ground beef
Legumes and beans (not a lot)
Rice
Cereal
Grape juice
Eggs
Grated cheese
Some drinks DH likes to drink
Made sure I have enough ketchup and mayo for two weeks
We routinely have a lot of flour pasta milk and some cans
Normal shop of fresh fruit and vegetables because they are perishable
Plus we have snacks and candy left over from Purim.
Otherwise whatever we have in our pretty extensive pantry.
ETA
I got a bunch of Tival microwaveable veggie schnitzels for my starving adolescents.

I didn't do panic buying but I stocked up on items that were easy to prepare as I was assuming not wanting/being able to cook.
I would probably cook items that freeze well if I had time to do that - I.e. stews and braised meats; meatballs are all items that freeze and heat up well.
Soup
Crackers
Pretzels
Cheese
Frozen Fruit and Veggies
Frozen Juice
Canned Tuna
Frozen Meals
Bread to be frozen
Other Suggestions
Powdered milk in the event that the supply lines for dairy breaks down

You cant stock up on potatoes. They go bad really really quickly

What? Where do you keep yours? Potatoes can easily last 2-3 months in the fridge.

In the fridge? Potatoes are not supposed to be kept in the fridge!
I keep them in my pantry in a wire bin and they don't last more than a week at most

I've always kept them in the fridge. Nothing bad has happened to us thus far.

I wasn't quarantined, but I stocked up In case.
I got: (for a fam of 4)
2 huge Cans of kidney beans
9 Cans of corn
3 large cans of Baked beans
8 boxes of Granola bars (chewy kind from Aldi's)
Cereal x2 boxes
2 cannisters of oatmeal
6 bottles of Peanuts
4 boxes of Ritz style Crackers
8 boxes macaroni/spaghetti
3 bottles of Tomato sauce
5lb of Matzah
1 big box of Powdered milk (10 packets inside)
1 large Grape juice
Toothbrushes/toothpaste, enough for everyone
Hand soap
Shampoo/body wash
Deodorant
1 large dish soap
1 bag dish washer pods
2 things of Napkins
12 rolls Toilet paper
2 lb ground turkey
2large pkgs chicken bones for soup
Then I'm going to make sure to have on hand some eggs, cream cheese, butter, ketchup, mayo, potatoes, onion, carrots, fruit, veggies...etc. But not to stockpile capacity, just to have in addition.
