3 sweet potatos
2 eggs
3/4 cup water
1/2 cup sugar
1/2 cup oil

mix

1 cup ground nuts
1/4 sugar
3 tbsp oil

mix and press into bottom of pan.
pour sweet potato mixture over, bake about an hour

Micki - yours looks great. I used the one from the Spie & Spirit, but it has no crust. Hope its good.

Here's a crust rec ipe from the Bababuste's Choice Pesach cookbook:

1 egg white
4 T sugar
1 1/2 nuts, chopped
pinch of salt

Preheat your oven to 375 degrees. Beat egg white on high speed, gradually adding sugar until stiff. Gently fold in nuts and salt. Press onto bottom and sides of greased 9 inch pan.

Bake 8-10 minutes or until light brown in color. Cool. Can be used for ice cream, cheesecake, sweet potato, etc.

mickis recipe is terrific!!! I made it w/o a crust and am caliing it sweet potato kugel!!!!

My recipe is a bit more simple.

Boil potatoes. Drain. Mash really well. Then just add sugar. My kids like it better without the other ingredients. I think it tastes better too. I do use the same crust as Micki and it tastes great!! Then I bake it for the same time.

the sweet potato kugel was a big hit here. my mom said it tasted like candied yams. maybe I'll call it candied yam kugel.............

Can someone who has made this, clarify this recipe for me? am I cooking and mashing the sweet potatos, I assume?
or anyone else have a tried and true sweet potato kugel to share, please? Prefer without potato starch and I don't use matzo meal.

2 pesach pie crusts (optional. If you cant find/dont want to use, just use 2 round pans)
3 LG sweet potatoes - 3 C mashed
1 C sugar
2 eggs (or half cup applesauce if allergic)
Pinch of salt
tsp van.
1/2 C nondairy milk
1 stick melted margarine
* mix and divide into 2 crusts or pans
TOPPING:
1C Brown sugar
1/3 C potato starch (or almond flour)
1/3 C melted margarine
1 cup chopped pecans

*Bake uncovered 350° 45 min.

I make this every year. It's the besssssssst
