This is a very sweet and lemony salmon.

1 onion circle sliced
2 cups sugar
Appetizer size salmon fillet
Lemon juice
Salt

Pour sugar over onions in a 9x13 pan and “sauté” in the pan on the stove top being careful that the sugar doesn’t burn. The sugar should turn to a golden brown syrup and the onions should soften.
In the meantime sprinkle salt liberally over salmon and let sit .
Once onions are caramalized , Golden brown in color and soft , rinse salt off salmon and place in pan on top of sugar onions. Pour lemon juice on top of salmon until covered. Cover pan with foil and cook in the pan on the stovetop for 17 minutes and small-medium flame. Let cool and refrigerate in the pan you cooked the salmon in.

You can cut down on the sugar if you'd like.
