In my Pesach hotel they served these little rolls and also used this as the base of pizza. There was no gebraks there. Any idea how to make these? Thanks!

Some recipes are gebrokts, some are not. Some are for large quantities, some for smaller. Take a look through, and pick one that will work for your size of family.
BTW, I could be wrong, but I don't think these would freeze very well. They're probably best fresh out of the oven.
