Better to cook chopped meat for long time and quick?

I cooked chopped meat with tomato sauce, onions and ketchup. I never know how long to cook it for. I used to cook until no longer pink and it would taste very dried up. Now I cooked for about 45 minutes and it looks good. But I wonder , in general do the flavors develop more if you let it cook longer? How long do you cook chopped meat?

Really depends what your making but 45 min sounds abt right.
