Roast or sautée 1 eggplant-cubed or sliced
3 scallions-optional
1-2 peppers sliced
4-5 cloves cloves garlic or frozen cubes

Combine (Melt in microwave or stovetop)
1/2 cup each-sugar, vinegar, water
Add dash of white pepper

Combine everything
Better after marinating few hours
