I ended up with two large buckets of cottage cheese and my kids don't like it plain. Does anyone have a recipe I can use to make something with it? Preferably a recipe with only basic ingredients so I shouldn't have to buy anything additional? Thanks!

Cottage cheese pancakes
1 container (approx 500 grams) cottage cheese
4 eggs
1 c flour
1/2 c sugar
mix, fry on very low flame with minimal to low oil

My simplest recipe is to mix it with some cinnamon, vanilla and sugar and then put on toast and broil it until it warms. It tastes a little like a Danish or blintz filling without any work.

Stuffed shells:
Mix a container cottage cheese with a bag shredded cheese. Stuff cooked pasta shells and line up in pan. Pour pizza sauce on top and bake on 350 for about 1/2 hour.
Or u can mix shredded cheese with cottage cheese and use it for lasagna.
Cheese blintzes and cheese cake are also an option.

Cheese Latkes
1 lb. Cottage cheese
6 eggs
1 cup sugar
Pinch of salt
1/2 teaspoon cinnamon
1/2 teaspoon vanilla sugar
1 cup flour
Bit of lemon to taste (optional)

6 eggs to 1lb cottage cheese? Isn't that too much?

That's the recipe.
But it is quite "liquidy". Next time I make it I'll probably try it with just 4 or 5 eggs, but otherwise it was good.

2 or 3 eggs is enough for 1 lb cottage cheese.

You can try freezing it to use for Shavuos. Blintzes, cheesecake, lasagna, yum.

Thanks everyone. I think I'll do half cheese latkes and if that doesnt go over well I'll make stuffed shells with pizza sauce.

I make cottage cheese pancakes and use this recipe. Its incredible, all my kids love it. Its not so sweet and has just a bit of sugar so its much healthier than others. You don't need them to be sweet, the cheese has enough natural sweetness.

Also I use cottage cheese for baked ziti instead of ricotta. My kids prefer it because it’s creamier, I prefer it because it’s cheaper!

I've been making chapchuri a lot lately. All you need is bread or pizza dough, cottage cheese, any other plain shredded cheese like mozzarella, egg, salt and butter. Mix the cheeses, form the dough into a boat shape and put a couple spoonfuls of the cheese mixture inside, crack in an egg, bake till the dough is done and the yolk still soft. Before serving add salt and butter. Not too complicated, good alternative to pizza, and the kids love it.
