Bake and Freeze Ideas?

Lately, I've been baking double and freezing before Shabbos. This way, I only need to bake every couple of weeks and it saves lots of time. So what are some recipes that taste great defrosted and don't require any special ingredients (limited access to the grocery store, for obvious reasons)?

Carrot muffins:

1 jar baby apple sauce
1 jar baby carrots
1 3/4 c sugar
2 c flour
2 tsp cinnamon
1 1/2 tsp baking powder
3/4 tsp baking soda
1 tsp vanilla sugar
4 eggs
1 c oil

Mix everything together in mixer.
Fill cupcake papers 3/4 full
Bake 350 30 minutes


Glaze:
1/2 stick margarine
1/2 container confectioners sugar
1/2 cont tofutti cream cheese( I use regular cream cheese)

Yields: 20 muffins

Whip in mixer and swirl on top of muffins

U think I can make the recipe without the carrot and use 2 jars of apple sauce instead?
I X have carrots...

Chocolate chip cookies, brownies, yeast cake. Most cakes freeze well.
I make granola bars that freeze nicely:
1.5 cup oil
1 cup brown sugar
6 eggs
6 cups oats
2 cup w.w flour
Half tbls. Baking soda
Tbls salt
Cinnamon
Bag of chocolate chips
Pat into a cookie sheet pan, bake for approx 30 mins. Cut while warm. You can freeze it and take out a few minutes before serving.

My husband likes vanilla flavored or cinnamon flavored stuff to eat
What can I bake for shabbos something good?

Btw I can ttly vouch for carrot muffins they are divine

Shevi, are these crunchy granola bars or soft inside? They sound delicious.

Also, I assume you bake at 350 degrees. Correct?
