I have baby potatoes- A little not enough for my family, 2 regular potatoes, a small carrots, parsley root, that I wanna use up. What can I do with these? I need to make room in my fridge.

Not sure about the parsley root, but the potatoes and carrots can be cut up, tossed with oil and spices, and roasted.

You just got me thinking. But somehow I keep baby potatoes in the fridge. I dunno why. I just do. Lol. I should really take it out of the fridge.

I heard that potatoes in the frig turn sweet. Maybe a myth. You can roast them all, including the parsnip.

A crockpot dinner with potatoe, carrot, chicken or meat and add whatever other veggies and seasoning you like.

Cube and toss everything together with the whole baby potatoes, toss with olive oil, garlic, salt and pepper and roast for a side dish to dinner.
