I know it lasts a long time in the freezer, so you can make it now and just defrost it beforehand.

I think it's actually better after a day in the fridge. 2 days is fine. 3 days it might start to not taste as fresh already, but hardly discernible, still completely fine. After 5 days does not taste very fresh at all.

When I saw the title, I thought "it's never too early, it might just not be there anymore by yt".
But then you asked how long it will last in the fridge, and I thought "not more than a day ;"
Sorry, I know I didn't answer your question, but I'm a cheesecake lover, so I just couldn't resist.

I keep cheesecake in the fridge for sure for a week, sometimes even longer. It's still very good after a week.
