If a recipe calls for shortbread cookies, what kind of cookies can I use to replace? Pls. help ASAP because I promised my kids we'd make this cheesecake recipe they found and we're running out of time Smile

Shortbread cookies are fairly bland butter cookies that are crisp. So really cookie that has that kind of texture - crisp and a buttery flavor. There are lots of shortbread style cookies available besides the ones that are specifically labelled "shortbread".

I assume the cookie is to make the crust instead of using a more typical graham cracker crust?

I have recipes that use a raw cookie batter dough which is baked in the pan and then is filled with the cheese mixture and baked again.
