Going to a cabin/bungalow and I need easy filling meals that don’t make a mess! On the healthy side won’t hurt..

I like stir frying chicken with fresh veggies (mushrooms, string beans, colorful peppers, etc...), sprinkled with a little salt and pepper, soy sauce and garlic powder.
Serve with brown rice (which I make in a rice cooker, very little mess, the rice cooker insert is non-stick and rinses out very easily.)

I love stir fry but I make a royal splattering mess Every. Time.
So this is exactly the kind of mess I want to avoid 😂

Grilled chicken. Basically chicken cutlets seasoned and cooked on a grill pan And serve with A salad , rice or veggies.

Burgers. Bake on a cookie sheet at 425 for 20 minutes.
Breaded chicken. Bread in a Ziploc bag, zip and shake. Lay on a cookie sheet, spray and bake at 400 for 20 minutes.
Salmon needs 18 minutes at 400.
Lasagna (no cooking noodles in advance).
Steak. Broil for 5-10 minutes per side.
While baking any of these, you can place another pan on the bottom oven rack and bake potato wedges, small pan of rice, etc (will take longer so start those first).

I like using my toaster oven for that type of situation.
Toasted bagels with cream cheese
Grilled cheese
Frozen pizza
Fish sticks
Frozen blintzes
Pizza bagels
Frozen falafel balls in pita with bagged salad and techina
Open up a can of baby corn or regular corn... pickles
Yogurt

Instant pots are incredible. You can make full dinners in a fraction of the time and almost no mess besides washing out the actual pot insert. We make rice with veggies and chicken cutlets, chicken on the bone and potatoes, just juicy cutlets on their own, stew.... you can make tons of stuff. They're not super cheap but incredibly versatile and don't heat up your kitchen like an oven or stovetop would. They're also super quick so you can spend less time in the kitchen and more time having fun
