I'm simple, I just mix cottage cheese with cinnamon and sugar. If I'm frying the blintzes, I'll add an egg. If I'm just giving the kids crepes and cheese for a snack, I leave the egg out.

This is from the Balabistas Choice cookbook and my go to blintz recipe for 20 years .
1 lb cottage cheese (I prefer whipped)
1 7.5 oz farmer cheese
1/4-1/2 cup sugar
1 vanilla sugar (1 tbsp)
Dash cinnamon
Mix well with spoon or you can use a hand blender if you want it really smoothe.
Place a spoonful of filling into each crepe.
