as a couple? something more private than a hotel but am open to hotel ideas too. minyan a plus.

If you want a minyan, NH is a great option. There's also Onset in Cape Cod. VT minyan is tricky, especially this year. You could go to Buffalo which has minyan and see the US side of Niagara if you haven't been. Newport is nice but last I checked the Touro Synagogue was still closed for davening, though there should be enough tourists there that something can be worked out. If you don't want a hotel, find a nice AirBNB in the area.

Many now dont attend Minyan, depends on what the Rabbis of your community suggest. (Social distance ).
Check 10 days weather. Looks like next week many vacation locations will be 60% T Storms, so anyone who wants to do ourdoors - hikes - boating - wont work.
Any areas with no much rain expected for next week, and 4-5 hr driving from NY/NJ?

We loved the Crescent Lodge in the poconos. They have small, private cabins with porches. We enjoyed the grounds and went to Bushkill Falls.
It was clean and beautiful.

We are chassidish but DH will comply with any mask SD necessary. In fect DH has always been cautious and still only goes to a smaller minyan windows open space etc. and not to simchas. We don't care about rain just need to get away for a little.
