Coconut Chicken

Coconut Chicken
from another site, with my changes

3/4 cup pineapple or orange juice
1 cup cream of coconut - Vittaroz has a hechsher
soy sauce
1/4 cup brown sugar
1/4 cup vinegar, rice preferred
1 cup flour
pepper to taste
2 lb shredded coconut
2 lbs chicken cutlets, cut into strips - or use any chicken you want
3/4 to 1 cup oil, peanut pref.
1/4 cup pareve sour cream or mayonnaise; optional

You cut up the chicken and marinate it - 4 hours or overnight - with 1/4 cup juice and 1/4 cup cream of coconut, a few good shakes of the soy sauce, your brown sugar, and the vinegar.

On one plate, put your flour; on the other, your coconut. Dredge chicken into flour and then coconut.

Saute in the oil about 5 minutes on each side and the drain the rest of the oil in the pan. Add the rest of your pineapple juice, the cream of coconut and your mayo, and heat until thickened.

Eat and enjoy!
