I sub 3/4 the amount of oil for the margarine that is called for, and then just about any cookie recipe doesn't need a mixer (once there is no marg. to beat, just put everything into a bowl and mix either with a wisk or a wooden spoon).

I never use a mixer with cookies. The heavy batter gums up the "antlers" too much.

so what do u do when a recipe calls for margarine? how does I get smooth and creamy? do u melt it? do u only use oil?

You can leave margarine out of the fridge... you can nuke in the microwave or let sit in the oven for a couple of minutes ....

Sorry it took me so long to post it! This recipe is unique because you melt the butter/ margarine & mix the warm butter with the sugars. For some reason this step gives the cookies a great flavor. It requires a bit of advance planning cuz the dough needs to be refrigerated for an hour, but other than that it's really simple to prepare. I have made these cookies way too many times to count. (Oh, & the dough is really yummy too, btw ) Here's the recipe:
1/2 cup butter or margarine
1/2 cup brown sugar
1/2 cup sugar
1 teaspoon vanilla
1/4 teaspoon salt
1 egg
1 1/8 cup flour
1/2 teaspoon baking soda
1/2 bag chocolate chips
1/2 cup chopped walnuts (optional)
Melt butter in a small pan. While hot, add brown sugar & white sugar. Mix & let cool a bit. While cooling, mix dry ingredients in a big bowl. In a small bowl, beat eggs with a fork & add with the vanilla to the butter-sugar mixture. Now add butter, egg, & vanilla to the dry ingredients, stir again. Add chocolate chips & walnuts.
Refrigerate for 1 hour.
Preheat oven to 375. Shape dough into walnut size balls & bake on an ungreased cookie sheet (I use a disposable one covered with parchment paper) for about 10-12 minutes. Start checking the cookies after about 8 minutes or so, because every oven is different & you don't want them to get overdone. They should be light colored when you take them out - don't let them get brown.

I soften it in the microwave and use a fork. It works really well. I don't think I've ever used a mixer for any cookie recipe and only use my hand mixer for whipping eggs and rich's whip.

yes, I have a recipe that calls for sugar, margarine and flour and you mix it by hand. this used to be my mishloach monos staple for years since I didnt have a mixer until 2 years ago.

1 1/8 cup of flour - don't be embarrassed!
Just fill one full cup of flour
add to that one half of a 1/4 c. of flour.
Clear as mud isn't it?
