Ra_Mom shared a marinated eggplant dish once that I discovered works wonderfully with a variety of vegetables, not only eggplant (e.g. works great with roasted bell peppers). Should work great with mushrooms, too. I'll try to find it for you later

Just sub eggplant for sliced mushrooms. Probably would be tasty with raw or roasted mushrooms
