I really like that recipe I add sautéed onions & mushrooms to it. I would to do it with other vegetables anyone have anything like it with lower carb vegetables?

Zucchini, spaghetti squash, carrot, cauliflower, spinach, pepper, eggplant.

I know which vegetables to use.
But with the water content being different in each I was wondering if anyone had a recipe for something like the broccoli using other vegetables.
