Without worrying about beauty or cost..
What would you put in it? How would you lay it out? What material would you use?
Let’s hear.
Ie. I might decide to have a urinal somewhere for those who can’t aim.
Or carpet the whole foyer with those commercial grade carpets...

A soundproof master bedroom with a waterfalls, beach, and tropical area. Jacuzzi, hot tub, sauna too.
Should include 2 beds, 2 bathrooms, 2 walk in closets. Soundproof wall between the 2 beds would be nice too.

Can I be really simple and just say I wish I had a laundry room?

Self washing floors. Closets that automatically rearrange themselves to fit everything.

I'm the nutcase who thinks about this a lot
Cork flooring (or linoleum with cork underlay) so that when kids and dishes fall, nothing breaks.
Radiant heating so crawling babies don't get cold.
Pesach kitchen behind a moveable wall in a side room so that it doesn't take much room all year but can be opened to be a normal sized kitchen.
Drain in the kitchen and all bathroom floors.
Washing machine in the kitchen (for tablecloths and dish towels) and two washer/dryer sets upstairs near the bedrooms.
No bunkbeds, so it's easier to make beds.
Storage room on main living floor for clothing that is too big or small.
Picnic table as kitchen table so chairs can't "disappear".
Sink in the hallway for filling negel vasser and brushing teeth, so that bedtime can go smoother.
Indoor active play area for the winter, with basketball hoop, climbing wall, jumperoo, and space for roller blades and kiddie bikes.
Ramp in addition to stairs, for strollers and toddlers alike.
Extra fridge and freezer in kitchen.
Surveillance camera with intercom in playroom, with screen in the kitchen.
And more...

A mudroom, with enough space in each cubby for each type of jacket, snow boots, other boots, all shoes, hats, backpack. 2 sinks, 2 dishwashers, 2 ovens. A dining room.big enough to add a table for company. A clear line of sight from my mist used kitchen areas to the backyard. A walk in closet for my room that's big enough for dh to get dressed inside so he doesn't wake me up. Storage, including a way to get the sukkah in and out without any steps or turning any corners.
ETA: I second Lawngreen's play area. It needs a high ceiling.

I've also thought of this. Gonna add
A sink outside the bathroom by the front door so everyone can wash their hands when they come home.
A nice looking slop sink in the kids bathroom to wash the babies and toddlers and not have to bend into a bath tub. (I already have this)
Mudroom/cubbies for backpacks and jackets.
A family and homework room adjacent to kitchen. With a floor that just opens up and swallows the toys. And then has an eject button to bring the toys back out.
A closet in the mudroom to keep school snacks for them to put in their backpack.
Speakers around the house.
Printing and copy station.

This is a topic I like to think about.
I would want a big, eat in kitchen, where I can have room to walk around, even when there are 5 other people standing around the kitchen, demanding my attention.
A large play area, with ample shelf space behind doors, to block the mess.
A laundry room with a table for folding laundry and a rod for hanging wet clothing.
A mud room with hooks where the kids can easily hang their coats.
A master bedroom with a bathroom in it.
A queen size bed to accommodate all the kids who come to sleep in my bed at night.
A Shabbos lamp in each bedroom.
At least 5 bedrooms plus a guest room.
A nice, comfortable office that would be off limits to the kids.
A stereo system where I can turn on music in one room and I could choose which of the many rooms it would play in.
No stairs, or a split level house with only half a flight between floors.
A big yard with a playground and a large grassy area with room to play ball.
A large porch with a roof over it so we could be out in the rain. And a porch swing on it.

Yes, definitely a big indoor play area where they can scooter and bike in the winter. I suppose that can double as a basketball court too
2 sinks in the master bathroom.
3 sinks in the kitchen, 2 dishwashers, 3 ovens. Or you know what? 4 ovens, I can use 2 for fleishig.
A hidden room somewhere.
Sink with jets in the laundry room.
Vacuum baseboards.

Loving everyone’s ideas! Keep em coming!
Place for linen and towel storage in the laundry room.
Huge sunroom for sukkos and second living area.
Enough space in each closet so that no change of season closet organizing.
Huge walk in closet to keep clothes u want to save but don’t fit.
Great playroom area...still need to figure out the best system.

Mostly I would want a sign up with a company that does general household maintenance and upkeep once a month. From tightening furniture screws, to paint touch ups, to deep cleaning, to sewer maintenance

A laundry room near the bedrooms, so that every sock doesn't have to go down to the basement and then back up.
A heated driveway to eliminate shoveling.

A driveway with an overhang that attaches to the house, and a door that leads straight to the mudroom and then the kitchen. The mudroom needs a place to sit to take boots etc on and off, likely a bench, which is also a good place to out groceries etc as they are brought in.
