Rutabaga (yellow turnip) is a great potato alternative. We discovered it years ago when we tried Atkins.

soak the beans for two days changing the water in between so that it's easily digestible.
If you want you can sprout the beans also.
Skip the potatoes and barley and add chicken and meat.

When I was doing keto I made a low carb cholent with black soy beans, onion and a kolichel. The meat was delicious! Not really cholent though.
How low carb do you have to go?

Regular turnip too will be the most like potato in texture and flavor. It is pretty bland
