Is this a thing? I remember something in the back of my brain that its asur to have gum in your mouth when you walk in a place that doesn't have an eruv but I don't remember if I am making it up or not.

Does anyone know if this is a thing?

Lol I remember that from camp (we'd leave the grounds for a shabbos walk and the counselors would say that).
Don't know if it's true.

It's considered carrying.

Yes. Carrying in your mouth is considered carrying, so you are not allowed to have a candy or chewing gum in your mouth when you walk in a place without eruv on shabbos kodesh.
