I saw a lo mein recipe with 1 tablespoon of sherry in it which I don't have. What does it add to the recipe, can I leave it out?

yes you can leave it out- just adds a bit of depth, flavoring, tenderizing

You can replace it with sake (rice wine), or a tablespoon of apple juice.

As others have posted, you can omit but the finished product is going to lack something just as a recipe would lack something if you omitted salt or other flavor.
Sherry lasts forever on the pantry shelf and is a good staple to have. Just avoid buying the cooking sherries which are terrible and buy an inexpensive real sherry. However as FF points out rice wine or mirin can also sub and they also have a long shelf live unlike regular wine.

It has a sweet smell and a light color. Go with apple juice or light grape juice for that tablespoon.
