Broccoli souffle
I'd leave out the mayonnaise and add some more egg instead.

You can use Thisisnotmyreal's recipe and use zucchini - just add a little extra flour.
If you want to avoid the carbs, lightly salt the grated zucchini and put it in a strainer for a half an hour or so. Then press out as much moisture as you can, the way you do to make latkes. Then you won't need to add any more flour. The point is that you don't want to make kugel soup!
Make pumpkin, sweet potato, yam, or squash kugel the same way you would make pumpkin pie, but use parve milk or creamer, add an extra egg, and use 1/2 the sugar. If you want to be extra fancy, sprinkle a layer of chopped pecans on top, and drizzle with a little maple syrup.
You don't want it overly sweet unless you are serving it for dessert - but it definitely needs some sweetener. You can taste the puree mixture as you go along, and add the eggs once you get the flavor right.
