Depending on your budget / time allowance somethings that were helpful were : food, cleaning help, easy individually packed snacks, offering to run errands, helping out with other kids, financial help.

I gave something totally unrelated. I bought potpourri for her bedroom with matching monogrammed towels. Something just for "her". I bought a gorgeous non-disposable matching bag and wrapped it gorgeous.

If she's spending time in the hospital, a care package with different types of snacks (extra points if you include some shelf stable things like protein bars or nuts) and magazines or light reading material. Also a lightweight blanket.

Most Nicu’s don’t allow it, even before Covid, all the more so now, guests are only allowed with a parent .

Things I found very useful with a baby in the NICU, and have given to other people as a nicu kit:
Unscented hand lotion- so much hand washing, they get really dry and chafed.
Unscented chapstick.
Unscented baby oil/sweet almond oil- to massage baby.
Note pad and pen- for communication with the nurses. Leave near the baby to jot down your questions and ask them to make little progress notes for you: baby lifted head, smiled, other milestones, etc.
Energy bars, little packets of nuts, seeds, dried fruit, etc. Quick, healthy, energizing snacks on the go.
Preemie pacifier.
Reusable water bottle and/or travel coffee mug.
Reading/activity material that's good with a short attention span, such as sudoku or logic puzzles, magazines, etc (I find I had tons of time to read but was unable to focus on a book for too long when in the NICU).
