How long past the expiration date is it safe to eat?

It's not the date that is so important, if it's only 6 months to a year out of date.
What is SUPER important, is the condition of the lid. Is the center puffed up, or is it in an indented position? If it's puffed up, chances are the seal has degraded and it's no longer sterile.
To double check, open it and give it a sniff. Anything that is even the tiniest bit questionable, throw it out.
You could also put a tiny bit on your tongue. If it tastes a little like vinegar, or seems "fizzy", then spit it out and rinse with mouthwash. It's spoiled.

If the package is intact, it should be fine, though the flavor and color will probably have suffered somewhat. follow FF's guidelines. On jarred and canned food, the "expiration" date is not a true expiration from a safety standpoint but more of a "best if used by", meaning that flavor deteriorates over time. So it won't be as tasty or colorful but should be perfectly safe to eat.
in future, use a Sharpie to mark the "use by" date on every package of food that comes into your house, and use the oldest first. If you have a food pantry in your area, donate anything that is approaching it's expiration date that you know you won't use. (Do NOT give expired food because by law they are not allowed to distribute expired food.)

Sometimes the color of a food indicates that it’s past its prime, too. I’ve seen that with grape juice.

Past its prime doesn't necessarily mean unsafe. It just means it won't be as good. We're working our way through a big bottle of grape juice that's way past its use-by date. It doesn't have that fabulous rich grape taste but it's usable. IME grape juice is best when it's about a year old. Grape juice that's too fresh also lacks that rich grape taste.

I just want to add, if the lid us puffed up, do not try it on your tongue. Swallowing Botulism toxin can be harmful even in minimal doses.
