Patient learned he had exposure on MONDAY, and began experiencing very mild symptoms (headache) either SUNDAY or MONDAY.
Patient became ill on TUESDAY. Was quite ill through THURSDAY, at which time symptoms began to subside. No fever as of FRIDAY.
Patient tests to confirm diagnosis of Covid on MONDAY.
Am I correct that quarantine ends on THURSDAY, 10 days after first symptom, more that 72 hours after last fever/symptoms subside.

If symptoms really started Sunday, yes according to American protocol. I can't speak for other countries. If patient really started symptoms on Monday, since it seems like it's unclear, then it would be Friday.
