My baby has an egg allergy and my kids live on popovers over pesach. Does anyone have a recipe?? Thank you!!

If a recipe doesn't call for more that one or two eggs you can substitute each one for 2 Tbsp potato starch or 1/4 cup applesauce.

In this case with 3 eggs, I would suggest 3 Tbsp potato starch plus 6 Tbsp applesauce as replacement (otherwise it will be too gluey).

I don't acutally know how you'd make popovers without eggs, as they are what makes them rise.

I remember seeing that you can sub 1T flax meal +3T water per egg, I never tried it so I dont know how it comes out.
