Another year of trying to find enough Pesach recipes for 3 days with no onion, garlic or mushrooms. Help!

We don't use garlic or mushrooms at all on pesach. And onions only to give flavor to everything bc we don't use spices. So (not to be mean, I'm on a super restrictive diet too) what's the big deal? There's plenty of recipes you can work with.

What do you like to eat? Anything can be made without onion garlic or mushroom, if you add the right flavors.

With this, and with all restrictive diets, if you come in with the attitude of "How can I have my favorite meals without these ingredients," you will be disappointed.
Instead, pretend you're on a cooking show and got a basket of all of the foods you CAN eat. What kinds of yummy dishes can you create with that?
- Delicious salads and salsas of all kinds
- Fresh Salmon with Lemon-Dill dressing
- Traditional Chicken Soup with or without matzah balls or egg "lokshen"
- Almond-Crusted Shnitzels
- Piped Sweet Potato Mounds
- Steaming Potato Kugel
- Oven-Roasted Zucchini and Carrots
- Refreshing Mango Sorbet
