I'm a decent, if not flamboyant, cook. But there are a few things I've never made well. Potato salad is one of them. I'd appreciate recipes; I feel like a good potato salad with baked schnitzel for lunch this Shabbat. Not to mention the fact that I vastly overbought potatoes for Pesach, and want to get rid of some.

I got this recipe from my sister in law.
It's a Pesach staple in my house. We keep a steady supply in the fridge for people to nosh on when they want something to eat but it's not mealtime. Sometimes they will have it with some tuna salad, or sometimes we stick in deli chunks for a mini meal/wholesome snack.

5 medium sized potatoes
2-3 good quality barrel pickles (Such as Flaum's)
2 TBS mayo (Lite works too)
1/4 cup pickle juice (yes, you read that right)
1 tsp salt

peel and cook potatoes
when cool enough to handle, dice into chunks
dice pickles
add salt, pickle juice and mayo (you will be surprised at how creamy it is with so little mayo)

Note: It's important to use good pickles because that is the basic flavour of the potato salad
Don't omit the salt even though it seems like there should be enough between the pickles and their juice. Without the salt, it just tastes like it's missing something.

No real recipe, just some tips:

Use hearty potatoes like russets since they'll hold their shape better and won't disintegrate into potato mush (still yummy but not potato salad!)

Add mustard. Dijon is great. Ground is fine, too. Just make sure to account for the liquid mustard when adding mayo if you're adding it!

Salt & fresh cracked pepper

Diced pickles

If you're feeling fancy, you can mix in some sliced scallions, too.

Personally, I like skins on on my potatoes, but of course do what works for you and your family.

Also. Another aspect to play around with is how you cook your potatoes. Traditionally people boil them, but feel free to try potato salad with baked potatoes instead (whole potato baked and then sliced). I find it doesn't fall apart as easily as the boiled does.

This reminds me of a family tiyul on Pesach a few years ago. At lunchtime everyone got out their own food and started comparing it everyone else's. Of course, we (almost) all had potato salad.

One sister, who is a functional cook, made it with potatoes and mayonnaise. One sister, who is a high brow cook, said she wouldn't dream of making anything so plebian. I had made it with olive oil, goats cheese, red onion and parsley. My sister inspected it and said she still wasnt making anything so plebian, but could I please give my recipe to her husband!

I don't have a exact recipe, but I cut up the potatoes as soon as they were cool enough to handle, then added the olive oil and red onion. Once they were cool I added parsley and cheese. Salt to taste. Fresh garlic optional - add while the potatoes are still hot. You could leave out the cheese to make it parev.

I cook peeled potatoes cut in quarters in salted water + a little pepper.

I add a large peeled carrot to the pot.

Make sure not to overcook potatoes to mush.

I put pot in fridge to cool.

Make a sauce: with diced onion, diced pickles, mayonaise & pickle juice. Add a squirt of mustard.

Cube the potatoes and dice the carrot and add to the sauce.

Yum!

Vegetable Potato Salad
Makes : 6 servings Preparation Time20 mins

Ingredients List
1 envelope Lipton® Recipe Secrets® Vegetable Soup Mix
1 cup Hellmann's® or Best Foods® Real Mayonnaise
1 Tbsp. white vinegar
2 lbs. red bliss potatoes or all-purpose potatoes
1/4 cup finely chopped red onion

Directions:
1. In large bowl, combine Lipton® Recipe Secrets® Vegetable Soup Mix, Mayonnaise and vinegar.
2. Add potatoes and onion; toss well. Chill 2 hours.

(You can substitute for the brand names.)

My MIL does as well, I prefer to just make egg salad and potato salad separately. Lol

I never heard of cheese in potato salad.. interesting!
I use mayo, pickle juice, sugar, salt and pepper
