Bushkill falls- Sometimes Grunwald caterers does shabbosim in Bushkill Inn
Check attractions at any place because most places are closed due to Covid or too early in season

Yes, the Hamptons and Cape Cod are nice and have Chabads, and I'd add Newport to the list. If you want a more urban environment, try Boston or Washington DC. If you want to be in the mountains, Tannersville is great.
