Caramel-Glazed Pear Cake

Caramel-Glazed Pear Cake

4 pears, peeled and diced (about 3 cups)
1 T sugar
3 eggs
2 cups sugar
1 1/4 cups oil
3 cups flour
1 tsp salt
1 tsp baking soda
1 1/2 cups pecans, coarsely chopped
2 tsp vanilla or rum, sorry Motek
Caramel glaze - see below

Toss together pears and 1 T sugar; let stand 5 minutes.

Beat your eggs, the 2 cups sugar and oil until blended. Combine flour, salt, and baking soda, and add to egg mixture. Mix until well-blended.

Fold in pears, chopped pecans, and vanilla.

Pour batter into a greased and floured 10-inch Bundt pan or 9 by 13 cake pan. Bake 350 degrees for 1 hour or until done.

Remove from pan and drizzle Caramel Glaze over warm cake.

Caramel Glaze:

1 cup firmly packed brown sugar
1/2 cup margarine
1/4 cup pareve liquid like Rice Dream

Stir together brown sugar, fat and liquid in small saucepan over medium heat; bring to a boil, and cook, stirring constantly 2 1/2 minutes or until sugar dissolves.

This sounds so yummy. I wonder if my chocolate oriented family might eat it though. Maybe the trips. They're still open minded in their food choices. I have to indoctrinate them to eat not just chocolate desserts, which is challenging given that I'm also pretty chocolate oriented! LOL

do you think you can use oil instead of marg in the glaze? did you make this? it sounds so good.

sure I made it. you can even skip the glaze, I think I will next time, it was so wet.
