Yes I freeze water challah and it's delicious. I can post the recipe tomorrow morning.

All the time. I make Rebbetzin Kanievsky's challa recipe as per the biography not the BY cookbook. I use bread flour, and usually use less than the recipe calls for, like 5 lbs. + a few handfuls. I also use a scant cup of honey instead of 1.5 cups flour. BH freezes beautifully.

Make yeast mixture: 1 c warm water, 1/2 c sugar, 4 T dry yeast. Let bubble.

In a big bowl, combine 4 cups warm water, 1 c oil, 1.5 c sugar then add the bubbly yeast mixture.

Add 5 lbs bread flour. Mix a bit and then add 4t salt.

Mix, knead, rise...
Let braided challahs rise covered 30 min on the counter or 20 min in a 200 degree oven. Bake 350 for 30 min (rolls 20 min).

To freeze: wrap in foil while hot or warm and place a few challahs in a 2.5 gallon Ziploc bag and freeze. I take the Frozen challah out of the freezer and throw it in the hot oven a few minutes before I turn the oven off before I light.

I use chez Chaya recipe. Freezes very well. I think the trick to freezing challah is rather how.

Not only do you have to know how to freeze, you have to know how to defrost. I take my challah out erev Shabbos AM and immediately put them in new bags in case there was condensation.
