I think the title says it all...
Also if someone has an exact recipe I can use that would help. I am looking to do a mushroom rice or couscous stuffed capon for yom tov.

yes, I've frozen them before. I didn't stuff with rice, I used broccoli kugel and a piece of pastrami

I froze it raw filled with cooked rice and it was good. My capons have a lot of sauce and it keeps everything including the filling moist

I saw this recipe and it looks good. Love the idea of freezing raw but my chicken is already frozen and defrosting and refreezing wouldn't be safe.
Leek, mushroom and deli stuffed capons with smoky honey sauce.

8 -10 capons
Salt, pepper
1-2 Tbsp oil
For filling:
2 small leeks (white and pale green part only)
1/2 lb mushrooms, sliced or chopped
300 grams Turkey style bacon (or deli of choice)
2 cups cooked rice
1-2 Tbsp oil
Salt and pepper to taste
For sauce
1/2 cup honey
1/4 cup apricot jam (I use bonne maman)
1 Tbsp smoked paprika
1 Tbsp Dijon
1 tsp salt
1/4 tsp black pepper
For filling-
Sautée leeks in oil for 2-3 minutes
Add mushrooms and sautée until water from mushrooms is released and evaporated and edges start to caramelize (about 5-10 min)
Add in chopped Turkey style bacon /deli and sauté for a few more minutes.
Season lightly with salt and pepper.
Add in rice and mix all together.
Set aside.
Season capons with a little salt, pepper and oil.
Stuff with rice filling (as much as you could fit… I used approx 1/3 cup in each capon)
Roll up and place seam side down in roasting pan.
Repeat with remaining capons.
*if you have extra filling, serve it as a side dish along the cooked chicken.
Mix sauce Ingredients together in a bowl until smooth and spread evenly over all the chicken pieces.
Cover roasting pan well and bake at 350 for 1 1/2 - 2 hours until sauce thickens and chicken is golden.
Broil for 1-2 min if you want a darker skin
(Pictures is with a one minute broil)
Scoop thickened sauce over chicken and serve.

Yes to freezing. Cook rice. Stuff capons w rice. Season to taste and brush a bit of duck sauce. Bake covered for an hour or an hour and fifteen min.
