Please share your recipes or menu. I have plenty soups but am stumped for nice mains and sides. For dessert we have compote I guess

Meats chicken and fish are perfect.
Hassel back zucchini
Roasted mushrooms
Lots of salads,romaine is good topped with chicken croutons or deli
Cabbage salad Cucumber saladBroccoli salad there are on the lower end of carbs

I know meat chicken veggies. But how do you cook them? I’d like something nicer than the usual grilled cutlet or burger I usually make…
I used to cook with wine but that has sugar.

Also we don’t use vinegar until after succos

chicken rib steak baked with with sauted onions and spices

any roast cooked with carrots, squash, onions, garlic spices and then blend the veg into a sauce to meat.

for sides

squash and tomatoes
string beans and mushrooms
stir fry veg

Capons stuffed with vegetables /ground meat
Chicken cutlets rolled with pastrami
Salt and pepper the meat, sear, add, mustard, paprika garlic powder, onion powder, coffee granules , rub it in.
Wrap tightly, bake on 225- 250 for 8-10 hours.

You just sauté onions and put on chicken and bake? I guess that’s only good fresh? Not sure if I want my oven on 350 the whole yom Tov but maybe that’s easier to just prep veggies and bake fresh

Thanks! Do you have a veggie stuffing recipe?

Is there a sauce for the meat or will there be enough pan juices?

No, I make this in advance and freeze it. It's delicious.

I sautee onions add paprika, sat pepper

pour oven ckicken with the leftover oil and bake covered

Tomato basil chicken from KBD. Make your own Italian dressing.

Same for chicken Primavera.
Google onion smothered chicken and make your own version with baby chicken cutlets.
Cut vegetables into matchsticks and wrap cutlets around them.
Make zucchini noodles and chicken matzah balls.

You can use dry wine. It has less sugar than compote

Here’s what we made for Shabbat:

Chuck roast sous vide fat 136 for two days, seasoned with garlic and salt and finished in the bbq

Ginger chicken scraps ( soy sauce/green onion/garlic/sesame oil/could also be done with mixed vegetables but not as thick this week)

Eggplant ( typically babaganouche or mixed with diced celery, red peppers, onions, olive oil, salt)

Roasted cauliflower
Pan roasted green beans with garlic and pine nuts
Turkey breast ( can’t remember seasoning but sous vide at 145 for about 6 hours then finished on bbq)

Greek salad with celery/red peppers/black olives/ tomatoes and dressing my hub threw together

Chicken soup with ground chicken meat balls (just chicken) carrots, celery and onions ( my kids like whole onions)

Butternut squash roasted with olive oil and salt/cinnamon

Other things we had on hand: burgers, baked salmon with sumac,) berries, roasted nuts my husband makes, tongue ( plain)

For RH there was also mushrooms w/leeks, Moroccan carrots

OTHER THINGS WE EAT:

Roasted or bbq veg
Eggs-omelettes, egg salad, dairy
Tuna salad
Pickles

No specific recipe for the veggies.
You can mash broccoli, chopped pastrami an egg with spices.
Mash One of the bodek frozen mixes.

No sauce is necessary there is enough juice. Wrap the meat in parchment paper to stay moist

You can do chicken roll ups with sauteed pastrami, cabbage & mushrooms
Grilled cutlet salad/ deli salad
Veg kugels like broccolli, cauliflower, California veg, zucchini, zucchini mushroom, mushroom.
Patties made from any type of veg
Green beans with pastrami mushroom
Stuffed portabella caps
Eggplant veggie rollups
Any frozen bag veg stir fried, you can add in chicken
Sauteed cabbage with mushrooms
