I usually buy the frozen bingo challa and then bake on Fri
I want to make the dough myself

Rise
Shape
Rise
Bake
Where do I freeze in this process?
I would think
Make dough
Rise
Shape
Freeze
Rise
Bake
Please help me!! Is this what u do ?whoever does this?? Ty!

if you have time to braid them Friday, I make the dough Thursday night, transfer it to a stainless bowl in a tightly sealed garbage bag and put it in the fridge overnight. (I clear one fridge shelf for it, it rises a bit but stays contained in the bag) In the morning I divide the dough in parts, let it rise some more and then braid...

I have found that freezing raw dough never works for me. It never rerises correctly and just doesn't work. I just bake and freeze fresh, covering very well and still tastes fresh when defrosted.

I make the dough whenever I can, freeze in balls the size I want (no rising before freezing), take from freezer to fridge Thursday. Then on Friday, take it out and let it come to room temperature before braiding and baking. I try to time it to come out of the oven a few minutes before I light. This process hasn’t failed me yet.

I use the Rhodes frozen dough.
Defrost
Rise
Shape
Rise
Bake
The extra shaping might be the key here. Maybe you can shape it into a ball the size of each challah, then freeze, and then follow the rest of the steps.

The process you outlined in your OP has you braiding the dough, then freezing, then rise, and bake.
A poster upthread mentioned that this doesn't work for her, so I'm thinking that if you freeze the risen dough as a ball (the way Rhodes does), then defrost, rise, shape, rise, bake, this might work better, since you're knocking the air out by braiding, then rising again.

This is the key. If you rise it at all before freezing it tastes bad after baking.

I've tried both. Braiding before freezing and just freezing a lump of dough and neither worked for me...

I freeze after shaping and defrost (covered with towel) late Thurs night. Fri I brush with egg wash and sprinkle sesame seeds, and then bake. It comes out great. I don't know why it doesn't work for some of you.

So you leave it to defrost / rise( I guess?) For about 7 hours overnight?
