does anyone know if aged cheddar cheese for approx 6 month has more vitamin and
minerals than young cheddar?

Are you the reviver of that other thread? You are really not going to get meaningful vitamins from dairy, unless it’s fortified dairy. You will get calcium, that’s all.

Don’t know about nutrition but remember that if it’s aged you might need to wait (6 hours or whatever you hold) before eating meat. I believe I was told 6 months is the cutoff but AYLOR
