Kugel itself can use egg as a binder but the combo of eggs + egg noodles in the recipe is apparently more than my stomach can handle...

Try it with pasta. Or use applesauce instead of eggs.

You can probably sub in any recipe just choose a thin pasta like maybe fettucini broken up. I gave someone my recipe once and she used regular pasta and I think she said it came out fine.

Maybe try angel hair pasta - that is very thin pasta.
