1 eggplant (cut in half)
2-5 cloves garlic (how much do ya like garlic?)
1 small onion diced
salt
pepper
lemon juice
mayo (optional)

lightly oil eggplant and roast with wrapped garlic (I usu. roast a whole head) at 300 until you can pull it apart with a fork

fincely dice the onion

once eggplant has cooled, mash with a fork, add as much garlic as you want, diced onion, s+p to taste (prob. about 1/2t. salt and a sadh of pepper), 1/2 Tbsp. lemon juice and 1T. mayo (if using)

you can also add chopped red and or green pepper to this

We all love it! I make it w/o mayo and thne use it as a spread on sandwhiches instead of mayo (tuna and chicken)!

300 degrees fahrenheit?

I put mine in a 9x13 pan with a little water in it.
prheat to 450 fahrenheit
Roast for about 15-20 minutes on each side
Take out the pulp when it's cool enough to touch
blend with 2-3 cloves of garlic, mayo, vinegar, salt and pepper

I couldn't believe it was this easy. I remember roasting it over an open flame and making a big charred yucky mess and never did it until I got this recipe!

I sometimes bake them and sometime when my oven is being used I peel the eggplant and cut into cubes and boil it.

then I drain it.

put into food processer and put some lemon juice, fresh garlic, salt, pepper and mayo all as needed.

I dont like it with a smoky taste and this one is not smoky

In my family my father usually makes this:
He uses a fork to poke holes in the eggplant and bakes it at 400 until it gets mushy. Once the eggplant is cool enough to touch, peel off the skin, mush up the inside add mayo, garlic powder, salt and pepper. Enjoy!
