Canned carrots have a cooked texture and the salads I am familiar with have a crisp texture.

Ideas for canned carrots - carrot bread or muffins. Carrot soup - all kinds of delicious recipes and easy to make. A stew with vegetables including carrots - just add carrots a bit later in the cooking process to adjust for the carrots already being "cooked". Carrot puree - just puree and flavor with seasonings that you like.
