I personally wouldn't want to spend a week in CT. In MA Cape Cod would be a nice option. There's a summer minyan in Onset, and there's also a Chabad in Hyannis. The Cape has a fun vibe with lots of different activities you can keep busy with, plus you can take day trips to Plimoth, Newport, or even Boston. Here are some options for things to do in the area:

Connecticut actually is a great place to vacation with young children, especially if you're coming from the NY/NJ area and don't want to spend hours in the car with kvetchy children.

We've enjoyed the following off the top of my head:
Maritime Aquarium in Norwalk, plus a boat ride out to the lighthouse
Mystic Aquarium and Seaport
Essex Steam Train and Riverboat
Connecticut Science Center in Hartford
Mashantucket Pequot Museum
Dinosaur State Park
Tour of Yale University and the Peabody Museum of Natural History
Connecticut also has a whole bunch of children's museums and planetariums and more active stuff as well.

Cape Cod is wonderful, some of my best memories were made there.
