What’s a good gift idea for middle aged single woman, non materialistic (wouldn’t appreciate a pedicure etc). Willing to spend up to 200.

What does she like? I'm not into manicures or stuff like that. I think I would want theatre tickets or sports event tickets (telecharge has gift cards) or a really great (stylish but useful bag), or maybe a nice piece of jewelry that looks nice with everything (too lazy to wear something different every time).

If you don't know her very well, stay away from 'experiences' and services that she may not enjoy.
Gifts like that, if inappropriate to the person (single or otherwise), are a burden.
A gift card, or if you want to make it more personal, something for her home/Judaica that is exchangeable, is a good way to go.

If she’s not living with her parents, a stunning vase with flowers. Not only married women appreciate flowers and I’m assuming she doesn’t get this gift very often

Actually, I hate flowers. It is probably the worst gift for me, followed by a gift card for a manicure (those I can at least let my DDs use).
Personally, I love housewares (especially when they are exchangeable and I can get my taste), gift cards, and chocolate.
My sister loved out of the box experiences.
You really need to know your audience-at least a little.

Well certainly not everyone likes everything! Not all married women love receiving flowers, but that’s with everything. I don’t like receiving food items even if it’s luxury food items, or anything food serving related. That doesn’t mean someone might not buy me a cake stand or bring dessert for Shabbos… it’s still appropriate
