In a medium saucepan combine 1 cup shredded cheese, 2 slices American cheese, 1/2 cup milk and 1 Tbsp butter. Mix over a medium flame until creamy.
Add 4 cups cooked drained pasta and toss to coat. Very creamy.

Am I the only one who makes it without a recipe? I cook the pasta, then put in and mix the cheese. Either that, or I leave the pasta plain and the kids who want cheese can melt it in the microwave….

For 1 box of macaroni: melt 1/4 cup butter on a low flame and stir in 1/4 cup flour once melted. After about a minute, add 2 cups of milk and raise flame to medium. Cook until starts to boil, mixing frequently. Turn flame to low, add 1 package of shredded cheese (either cheddar or mozzarella), salt and pepper to taste. Mix with cooked pasta.

You can do it without cooking the noodles first, with cream, eggs and cream cheese, and some parmeggiano sprinkled on top.
But I don't know the exact measurements now.

We all love this one. Kind of like a baked ziti without the marinara sauce.
I box pasta cooked and drained. Mix with some butter, sour cream, salt and pepper. Pour in and mix shredded cheese then sprinkle on top and bake at 400 till slightly crispy or whatever doneness you like.

My mac and cheese is famous among my kids’ friends 😄
Boil the macaroni in heavily salted water. I do 2 lbs of macaroni at a time, so that’s what this recipe is for. Drain in a colander, then quickly pour into a bowl or back into the pot so that some of the cooking water stays in. Working quickly, add about 2 cups shredded mozzarella and 6 pieces American cheese torn into little pieces. Stir, keep stirring until melted, then add a little milk to make it a little creamier, stir some more. No need to put it back on the flame if you work quickly.
Easy and everybody loves it! Best eaten right away, of course.
