I have tons of fruits and veggies leftover from food boxes… any ideas of what I can make for supper with them before they go bad? Here goes:
Sweet potatoes
Eggplant
Tomatoes
Pickles
Cucumbers
Peaches
Plums
Carrots

Eggplant: eggplant parm
Tomatoes, pickles, cucumbers, carrots: salad
Peaches, plums: fruit cobbler

Roasted veggies- eggplant, sweet potatoes, carrots with olive oil and salt and pepper
Easy fruit crisp with peaches and plums (recipe- 1cup sugar, 1 cup flour, 1 egg, 1 tsp baking powder, mix and pour over sliced fruit, bake for 45 min- 1 hr at 350)
Israeli(ish) salad with tomatoes, cucumbers and pickles. Add a pepper if you have.

Cucumber and tomato- Israeli salad
Plum-kugel/lie
Eggplant - parmesan
-ratatouille
Carrots-kugel muffins to freeze for RH
Pickles- add to tuna
- make into tartar sauce for salmon
Personally, I'd eat the fruit and most of the veg raw

Chop the tomatoes, cucumbers and pickles; slice the carrots cut into thin matchsticks. Toss together with olive oil, lemon, salt and pepper for a refreshing salad. If you have dried parsley, fresh scallions, red onion- add them all.
Peel and cut up the sweet potato; lightly coat with oil and roast until soft. Toss with coarse salt and black pepper.
Serve it all with eggplant parmesan.
Make a marinated eggplant salad for shabbos.
Make a peach crisp and plum pie for shabbos dessert.

Roasted sweet potatoes. Put into salad
Sweet potato muffins very similar to carrot muffins and perfect for the upcoming yomim tovim
Carrots into chicken soup or carrot muffins
Cucumber and tomato into salad
Eggplant cut into sticks dip in egg and crumbs fry same taste as eggplant parmigiana but diff. Kids might like it better this way
Pickles into corn salad or eat plain
Peaches and plums eat fresh or give away unless you’re into the whole cobbler thing.

pickles should keep awhile, and glass jar canning for most of the rest of your items. you could make more pickles from the cucumbers and you can pickle carrots, freezer or canned jams from the fruit, canned tomato/pasta sauce from the tomatoes. look up ball for instructions and recipes! sweet potatoes I'd do a mash and freeze for yom tov, and that just leaves eggplant which I don't really know how to use so I'd sautee and olive oil and add noodles and parm and hope for the best!
