Roast them and eat as snack or use as crunchy salad toppers.
Blend them and make your own chummus.

Dinner done has a great falafel crumble recipe. I make it all the time. I smash the chickpeas in a ziplock, add the rest of the ingredients, mix, and bake on a cookie sheet.

Saute diced onions and then add a can of chickpeas.
Add salt, red pepper, paprika, and a generous amount of cumin.
Keep mixing and cook until the chickpeas turn brown.
I serve this on shabbos with the chicken soup and IF there are any leftovers, with the eggs during the day.

Dinner Done has a great roasted chick peas recipe. You pour olive oil, some spices and roast for about 20/25 minutes. We eat it just like that.

I just put them in a pan, drizzle with oil and sprinkle generously with Zaatar spice (we use Trader Joe's). Bake in oven for about 40 minutes. Yum.

Moroccan beef stew. You can use ground beef if you want. Delicious
It has chickpeas and dried apricots and raisins and all sorts of yumminess in it.

Traditional family recipe (sorry, I don't measure)
Saute a cut-up onion in oil. Add small macaroni shapes like acini di pepe, or orzo or something like that. Saute the macaroni as well, until it turns pinkish-brown. Add chickpeas (you can add the whole contents of the can with the liquid) and add ground coriander. Add water to cover. Simmer for about 20-30 minutes. Serve with sour cream.
